I've been fiddling with the disk creator for Coyote linux, and it looks like its meant to be for a router. I don't really want my 486 to be a router :( . Is there some way of customizing this stuff? or do ya add stuff after its on the hdd? Eventually I want to run an IRC server on it, just so i can :D:D

You might want to look at PeeWee Linux (http://embedded.adis.on.ca/) then. PeeWee is an Ncurses based distribution builder. All menu driven, you select your kernel, modules and additional software, then compile and load onto a boot floppy, FASH device etc. I have had a play and it rocks.
